This recipe is especially perfect for summer, because you don’t need to do any cooking (other than toasting a piece of bread) and it’s super refreshing!
Mediterranean Avocado Toast
Who doesn’t love a quick and easy snack that’s flavor-packed AND nutritious?! This feta toast is all that and more, with refreshing Mediterranean flavors and plenty of protein to keep you satisfied for hours.
There’s no need to turn on your oven, either – all you need is a toaster!
The creamy avocado pairs so well with the salty feta, bright tomatoes, herby basil, and toasted bread. It’s like a more filling caprese salad, thanks to the protein-packed chickpeas.
You can even add a drizzle of olive oil and/or balsamic vinegar for even more flavor! And, you can easily make this a gluten free snack by swapping out regular bread for gluten free bread.

What You’ll Need
This simple snack toast is so easy to throw together! All you need is:
- avocado (It’s best to use an avocado that’s just reached its peak ripeness. When squeezed, it should have the slightest bit of softness. If it’s too firm, it’ll be tough to mash. And if it’s too soft and starting to turn gray instead of green, that means it’s overripe and the flavor will be off!)
- sliced bread (I prefer to use seedy, whole wheat bread for great texture and flavor, but you can use your favorite bread or any type of bread you have on hand)
- chickpeas (I use canned chickpeas to save time (be sure to drain and rinse them first), but if you want to, you can cook dried chickpeas ahead of time.)
- cherry tomatoes (Grape tomatoes also work! You can really use any kind of sliced tomato here. In summer, heirloom tomato would be amazing.)
- feta cheese (Crumbled feta cheese adds a delicious saltiness and slight creaminess to each bite. Feel free to swap it out with goat cheese or another type of cheese if you prefer.)
- fresh basil (Try not to skip this – it really ties all the flavors together with a Mediterranean flair!)
- salt & pepper to taste
You can easily leave off the chickpeas if you’re not a fan, or replace them with white beans. This recipe is super versatile, so you can pretty much add or leave off whatever you want.

How to Make This Feta Toast
To make this, start by toasting your bread. Meanwhile, scoop the avocado flesh into a bowl and mash it with a fork. Then, spread it over the toast.
Next, add your toppings: halved cherry tomatoes, crumbled feta cheese, chickpeas, and torn fresh basil. Sprinkle salt and pepper on top to taste.

This easy avocado toast is super quick and packed with refreshing Mediterranean flavors! A delicious and healthy snack.
Ingredients:
- 1 slice of bread
- 1/2 an avocado (mashed)
- Handful of cherry tomatoes (halved)
- 2 Tbsp feta cheese (crumbled)
- 2 Tbsp chickpeas (drained)
- 3-4 fresh basil leaves (torn or chopped)
- Salt & pepper (to taste)
Instructions:
- Toast bread to your liking.*
- In a bowl, mash avocado with a fork until mostly smooth. Spread over toast.
