Healthier Chicken Broccoli Rice Casserole
This is a great comfort food casserole that you all seem to love, too!

This creamy and delicious salad dressing is my fave for dressing my Zesty Italian Pasta Salad, but it tastes great on pretty much any green salad.

Gluten-Free Banana Pancakes
We make these protein-packed banana pancakes ALL the time. Riese loves them, and so do I.

This is one of our favorite go-to, REALLY quick dinners (ready in 15 minutes max). It’s super easy, packed with flavor, and healthy – and only uses one pan.

“I have to be honest, I was a bit skeptical of the cinnamon and nutmeg thing happening in ‘lemon zucchini’ muffins… BUT THESE ARE DEADLY, and DEADLY GOOD LOOKIN too!! (Probably the most beautiful muffins I’ve ever made, I’ll tell ya that)! No false advertising in the Web name… these have a fall aroma and aura to them that is just melt in your mouth fannetastic. Simple Banana Baked Oatmeal
Baked oatmeal is such a perfect meal prep recipe, and this recipe, which was first introduced to me by a friend whose place I stayed at, is always a hit!
“I have made this so many times I have lost count. Sometimes we double the recipe so we have a ready to scoop and reheat breakfast for a few days. Most recently I made it with homemade applesauce, no added sugar due to the bananas being ripe and it was delicious. What I like most is the flexibility – sometimes we add banana, raisins etc. And sometimes we don’t. Definitely a quick, yummy breakfast. Try it you will love it!” -Keri

This is my go-to salmon recipe – it’s incredibly easy and results in foolproof tender, delicious salmon. One only pan needed!
