Hello from Pittsburgh!
Matt, Riese, and I drove up yesterday afternoon to surprise Matt’s dad for his birthday! We, along with Matt’s younger brother Drew and his wife Morgana, were all waiting at dinner when Matt’s parents arrived – his dad was SO surprised! Such fun.
We just made it in time for the surprise – literally 2 minutes before his parents got there – whew!! Traveling with a toddler in tow isn’t exactly speedy or predictable so we were pretty proud we were able to make it in time 😉
I enjoyed a Caesar salad to start, and then the salmon bruschetta for dinner. Delicious! Riese helped me with it – she loves salmon.
As for food at home this week, we did a lot of cooking!
One night we had a chicken tortilla soup – it was yummy, and reminded me of a combination of a few of my recipes: Chicken + White Bean Chili Soup, Creamy Mexican Chicken Chili Soup (<- has hummus in it and is one of my all-time faves), and Instant Pot Chicken Tortilla Soup.
Mmm… now I want to make all of those again!
Another meal we had wasn’t beautiful but it tasted good. A saucy tomato chicken (<- similar to that recipe but with olives instead of artichokes) with some cauliflower rice.
Normally cauliflower rice isn’t super satisfying for me and I want some regular rice, too, but I wasn’t super hungry because I had cheese and crackers a little earlier. 🙂
Another dinner this week was some really simple salmon tacos – just salmon pan seared (or you could do my Easiest Baked Salmon method) and then shredded once fully cooked, plus cabbage slaw, hot sauce, and guacamole. Yum!
We’ve been good about continuing the family dinners this week (i.e. eating with Riese all together as a family vs. her eating before us and us eating after she goes to bed). I love it – so much nicer to eat with her and nice to not have to figure out what to feed her for dinner on my own anymore, either, since she just eats some of what we eat.
On the breakfast front this week, I’ve been doing some avocado toast as usual, and I also got back into the oatmeal scene even though it was really hot out and not exactly oatmeal weather… whatever. Trying to channel fall. 😉
I made my High Protein Oatmeal (<- recipe! basically oatmeal + eggs) but with lots of chia seeds instead of flaxseed, and Riese loved it too.
As for fitness this week, I hit up an OrangeTheory class one evening (I know, weird, I never work out in the evenings – I was just feeling it), enjoyed a yoga class yesterday morning with my buddy Chelsea, and also got in my usual daily stroller + dog walks, and 1 stroller run. I’m getting better at stroller running – it’s hard but fun! I feel super efficient having both Riese and the dog in the mix.
