I’ve always loved eggs. Not only are they delicious and versatile, but they’re also nutritional powerhouses (packed with protein, iron, and other vitamins and minerals!). Since I have lots of tasty egg recipes on my blog, today I wanted to share some of my favorite sweet and savory brunch recipes with eggs!
Brunch Ideas with Eggs
You can’t go wrong with a veggie-packed frittata or a savory omelette, but I have also included some brunch ideas you may not have heard of below, like savory mushroom and avocado oatmeal or berry lemon baked quinoa.
There are lots of yummy brunch recipes with eggs to choose from – it all depends on what you’re in the mood for and/or the season you’re in! Now, let’s get to the list.

We always look forward to this dish around the holidays, but it’s delicious anytime of year. The vegetables can be switched up too, depending on what your family likes or on the current season!

Just prep the ingredients in your slow cooker insert the night before, let it sit in the fridge overnight, then turn it on in the morning to cook.
I love this french toast casserole topped with blueberries, bananas, pecans, and a drizzle of maple syrup. But you can use whatever you like!
Lemon Pancakes with Ricotta
Ricotta cheese and eggs make these lemon pancakes wonderfully fluffy! They’re packed with lemony flavor and topped with an easy blueberry chia jam that pairs deliciously.
These are especially perfect for spring and summer, but can also be enjoyed year-round.

They’re warm-spiced and comforting, and pair deliciously with a dollop of Greek yogurt and/or drizzle of maple syrup.
Berry Quinoa Bake with Lemon
