Mozzarella Breakfast Sandwich
If you’re in the mood for a savory breakfast, this easy breakfast sandwich with creamy scrambled eggs is a perfect choice! It’s got lots of flavor and is super satisfying, but only takes 10 minutes to whip up.

You can use any bread you want here, and feel free to cook the eggs however you like if you aren’t feeling the scrambled approach (fried, boiled, etc.).
Ingredients You’ll Need
Here’s what you’ll need to make this caprese scrambled egg sandwich:
- eggs
- sandwich bread (I love seedy, whole wheat bread, but you can use any type of bread you want! English muffins will also work.)
- tomato
- fresh mozzarella
- fresh basil
- spinach (Arugula also works!)
Avocado would also make a delicious addition here!

How to Make a Scrambled Egg Sandwich
Start by slicing the mozzarella and tomato.
Next, scramble eggs in a bowl or measuring cup, then pour into a skillet drizzled with olive oil over medium-low heat.
Slowly cook the eggs, stirring occasionally, until they’re cooked through but still soft. Use a spatula to fold them into a square (so they’ll fit in the sandwich).
Next, assemble the sandwich!
Place spinach on a piece of bread, then add eggs on top. The tomato slices, mozzarella, and fresh basil go next, then top it all off with another piece of bread.
Lastly, enjoy! Feel free to toast the bread before assembling the sandwich, if you want it crispy.
What kind of mozzarella should I use?
You’ll need low-moisture, fresh mozzarella for this egg sandwich recipe. You’ll likely find this in the deli section or cheese section of the grocery store (instead of the dairy aisle).
If you can’t find it, you can use shredded mozzarella instead, but it won’t have the same texture.
What’s the best way to cook scrambled eggs?
The best way to cook scrambled eggs is slowly, over low heat to medium-low heat. This ensures they cook through enough without the eggs drying out.
Make sure to keep stirring the eggs so they cook evenly, and remove them from the heat immediately once they’re done cooking!
Scrambled Egg Sandwich Topping Ideas
You can easily customize this caprese egg sandwich any way you like!
Swap out the mozzarella cheese for another kind of cheese (like cheddar or feta), use arugula instead of spinach, or add cooked bacon.
You can even add a favorite sauce, like pesto, to amp up the flavor even more. You do you!

- 2 eggs
- 2-3 slices tomato
- 2-3 slices fresh mozzarella
- handful of fresh basil
- handful of spinach
- 2 slices bread
Instructions:
- Scramble eggs in a bowl or measuring cup. Drizzle olive oil in a skillet over medium-low heat. Pour in eggs.
- Slowly cook the eggs, stirring occasionally, until cooked through but still soft. Use a spatula to fold them into a square.
- Place spinach on a piece of bread. Add scrambled eggs on top. Add tomato slices, mozzarella slices, and fresh basil. Top it with another piece of bread, and enjoy!*
