If you’ve never bought persimmons before… please go buy some. Aren’t they cute?
I was feeling creative yesterday and this recipe for Cinnamon Vanilla Sautéed Persimmons was born! It’s super easy to make and VERY versatile.
Make a big batch of this on a Sunday, then enjoy it throughout the week! I especially loved the persimmons atop nonfat plain Greek yogurt.
The tart yogurt went perfectly with the sweet spiced persimmons.
They were delish on top of oatmeal, too!
Cinnamon Vanilla Sautéed Persimmons
Makes two servings |
Ingredients:

Instructions: In a medium sized skillet, combine all ingredients. Bring to a simmer and sauté persimmons about 5 minutes, or until liquid boils off. Serve alone, with plain yogurt, or atop oatmeal. Enjoy! |

I just did an hour of P90X yoga (felt sooo good to stretch my sore legs!) and now I’m off to work — as I mentioned, I’m working this week at my old office (where I worked as an editor) since I got home so early for break! Stay tuned for some new 5 minute packable lunches this week 🙂
Oh, and they posted the official race results for the Jingle All the Way 10k I ran yesterday here in D.C. — my official time was 51:29! I also discovered I came in 97th out of 795 women in my age group. Top 100, baby! Sweet 🙂
